Born in Mexico and raised in the warm, bustling atmosphere of his family’s restaurant, Chef Francisco “Paco” Rebollar discovered his love for cooking at an early age. Surrounded by the rich aromas and vibrant traditions of Mexican cuisine, he learned that food was more than sustenance—it was storytelling, connection, and love. After moving to Chicago to begin his professional culinary journey, Chef Paco honed his craft in the heart of one of America’s most dynamic food scenes.
With over 30 years of experience, he went on to earn recognition for his innovative, high-quality creations at Luna’s Restaurant in Gainesville and later as the visionary behind the handcrafted fine dining menu at White Oaks Bistro/Barn in Dahlonega. Every dish he creates reflects his deep-rooted heritage, diverse culinary background, and unwavering dedication to excellence.
